refactor: move ymdk/id75 to sub-revision

Description

YMDK is selling an RP2040 revision of this PCB now. I don't know if attempting to flash RP2040 firmware will clobber the F103 version's userspace bootloader (uf2boot), but publicizing the difference seems like a good idea.

(All the RGB data shuffling is because I instinctively ran qmk format-json -i keyboards/ymdk/id75/info.json...)
